Terrific tuna tomato salad recipe

A light, protein-packed meal that’s easy to prepare and full of nutrients:

Ingredients:

  • 1 can light tuna, drained and flaked
  • 2 large tomatoes, chopped
  • 1 cucumber, chopped 
  • ¼ cup fresh parsley, chopped
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Pepper to taste

Instructions:

  1. In a large bowl, combine tuna, tomatoes, cucumber, and parsley.
  2. Drizzle with olive oil and lemon juice. Toss gently.
  3. Season with pepper and serve immediately.
